This is one of our most popular appetizers at The Smile. I’ll admit that working with fresh favas is a bit labor-intensive because you have to shell them twice; however, I like to think that the dense meaty texture and bright, springlike flavor are worth the effort. Peeling the little pods is also great busywork for a friend/spouse/child who wants to help in the kitchen but doesn’t want to get involved in anything too heavy-duty.
