My mom always used to order a Sprite and a Greek beer at the cafés in the port on Hydra. She would mix them in a glass bit by bit, while shooing away the yellow jackets that would land on the rims of the bottles. I make this homemade lime syrup for the same effect—without watering down the beer as much.

Ingredients

For ¾ Cup (180 Milliliters) Lime Syrup

  1. ½ cup (120 milliliters) freshly squeezed lime juice (from about 4 limes)

Method

  1. Make the lime syrup: In a small saucepan, combine the lime juice and sugar and cook over medium heat until the sugar is completely dissolved, about 2 minutes. Remove from the heat, let cool completely, cover, and refrigerate. (The syrup will keep, refrigerated, for up to 1 month.)
