I think it’s important to have an extremely simple leafy salad in your arsenal, something light and refreshing to serve with a heavy meal like a seared steak or a big meaty roast. I love the way whole butterhead lettuce leaves look piled high on top of each other, the tender pale green dotted with bright magenta radishes. This dressing is the one I make most often at home, a very basic vinaigrette punched up with subtly aromatic celery seeds.
