There’s something about this classic French soup that feels at once austere and elegant. I can imagine a family of Provençal farmers sitting around a worn wooden table eating this melted mixture of pale green leeks and hearty potatoes out of impossibly beautiful white bowls. That little fantasy sums up what I think of this dish—filling, wholesome, yet lovely in its simplicity.
