I like the contrast of the dark, charred taste of the string beans and the fried shallots with the coolness of the basil. Let the string beans cool completely before mixing them with the other ingredients so that the flavors remain distinct.

Ingredients

For the Fried Shallots

  • 2 medium shallots, halved and very thinly sliced
  • ½ cup (120 milliliters) vegetable oil

Method

  1. Make the fried shallots Place the shallot slices in a single layer on a paper towel and press with another paper towel to remove moisture.
  2. In a small saucepan, heat the oil over medium-high heat until very hot, 2 to 3 minutes. Drop in the shallots and fry until golden and crisp, about 2 minutes. Remove with a slotted spoon and drain on paper towels.
