This is one of my favorite dishes in this book, sweet and pungent from the shallots, green and crunchy from the string beans, with a bright finish from the lemon zest and parsley.

Ingredients

  • teaspoons kosher salt, divided
  • pounds (680 grams) string beans

Method

  1. In a wide heavy-bottomed sauté pan, bring 2 inches (5 centimeters) of water and 2 teaspoons of the salt to a boil.
