Olive Oil Mashed Potatoes

I truly love these rustic mashed potatoes smothered in fruity golden olive oil and laced with salty capers and vibrant dill. The recipe is almost impossible to mess up, since the potatoes are cooked until they’re falling apart and everything is simply mashed together with a fork. This is a good dish to serve with roasted or grilled lamb chops.
