In my opinion, the greatest thing that Greek food has to offer is perfectly grilled fish. Some of the best meals of my life have been whole grilled fish, both at island tavernas and at my favorite Greek restaurant in Queens. I suspect that there’s a special magic to the grills themselves, either through years of use or thanks to the chef’s devotion to arcane techniques. At one taverna I know, the proprietor keeps the bed of smoldering coals in his outdoor grill alive by routinely blowing on
