Parchment-Steamed Cod

This is one of the first dishes I developed for the dinner menu at The Smile. We didn’t have a grill, gas ovens, or any ventilation, so I came up with this parchment-cooked cod so that the whole restaurant wouldn’t smell like cooking fish. While it’s a little finicky, I love this method because the ingredients all steam together, infusing the cod with lots of flavor.
