To me, rosemary is the herb—distinctive and fragrant—that captures the essence of Greek and Italian cooking. I tend to think you can never have enough of it. In this dish the sweet, intensely herbal rosemary butter takes the lead, complementing the light nuttiness of the cranberry beans and darker, milky flavor of the pork sirloin. Raw fresh cranberry beans have a beautiful white-and-crimson splatter pattern but turn a lovely pale violet when cooked.
