When I was growing up, every year on Christmas Day my parents would throw a big party for any friends and family who had nowhere else to go. My mother would make two enormous copper pots of this chicken and leave them bubbling on the stove all day. She used the recipe from Paula Wolfert’s seminal cookbook Mediterranean Cooking, which now falls permanently open to the same page, stained from years of use
