This is a simple dessert perfect for summertime, when fresh berries are plump and flavorful. Infusing the cream with a vanilla bean gives it a unique fragrance and appealing little flecks of tiny black vanilla seeds.

For the Vanilla Cream

  • 1 ½ cups (360 milliliters) good-quality heavy cream
  • 2 tablespoons

Method

  1. Make the vanilla cream: In a small saucepan, combine the cream and sugar. Gently scrape the inside of the vanilla bean with a paring knife and toss the seeds and pod into the pan.
  2. Heat over low heat, stirring often, until the sugar is dissolved and the vanilla has infused the cream, about 4 minutes. Remove from the heat just when the mixture start
