In my version of the classic English dessert, which features soaked chopped dates mixed into the batter, I’ve replaced some of the sugar with date molasses to emphasize the rich flavor and natural sweetness of the dates. You can buy date molasses at specialty shops or order it online; it can be used as an exotic alternative to sugar, regular molasses, or maple syrup. I love how the rich, gooey caramel sauce combines with the spice notes in the cake for a decadent, comforting winter dessert.
