Method

On a barbecue, chargrill the outside of the beetroot until completely black. Set aside and leave to cool. Juice the beetroot and collect 500ml (1pt) of juice. Add the juice to the ethanol. Set the water bath of the rotary evaporator to 60°C (140°F) and distil until all the liquid has evaporated. Measure the ABV and cut the resulting liquid to 40% using
