The ingredients are simply chopped very small, and mixed together in whichever proportions you prefer, more fruit, more chilli or more onion according to taste. The thick, viscous juice of the mango holds everything together without any thickening agent, and it has a most pleasing texture.
The essentials for a salsa are hot, sour, sweet, not unlike punch, to which are added onion and luscious fruit, which might, instead of mango, be pineapple, papaya, melon or tomatoes. Mint and coriander sem absolutely the right herbs, but if you have access to them you might try more exotic herbs such as hoja santa, Mexican tarragon, and epazote.
