Festive Chilli

Name: Festive Chilli

Ingredients: 1-2 tablespoons paprika; 750 g (1½ lbs) boneless turkey meat, raw, diced very small; 250 g (8 oz) blade, feather or rump steak, diced very small rather than minced; 1 onion, peeled and finely chopped; 2 tablespoons sunflower or olive oil; 2 tablespoons sunflower or olive oil; 300 mls (½ pint) beef stock, or another can of beer; 300 mls (½ pint) beef stock, or another can of beer; 1 can American beer – 450 mls (16 oz); equal amount of American whiskey; 1 can – about 150 g (5 oz) – tomato purée; 1-2 teaspoons cayenne or dried chilli; 1-2 teaspoons cayenne or dried chilli; 1-2 tablespoons ground cumin; salt to taste; beans – see recipe

Traditionally made with beef or with venison, chilli is a good dish to serve around Christmas time when you might have more turkey than you know what to do with. And a spicy dish makes a welcome change from rich holiday food. This is a perfect recipe for a New Year’s Eve party and was devised by Ron Miller of Pittsburgh.
