Chocolate and Red Wine Sorbet


  • 100 g (4 oz) chocolate
  • 200 mls (7 oz) good full-bodied red wine
  • 1 cinnamon stick
  • 200 g (7 oz) caster sugar


Break up the chocolate, and put it in a bowl. Bring the wine, cinnamon, and sugar to the boil, and simmer for 5 minutes.

Remove the cinnamon stick, and pour the wine over the chocolate. Stir until melted and well mixed.

Allow to cool, and then freeze in a sorbetière, or ice-cream maker, following the manufacturer’s instructions.
