Fresh Yellow Chutney

Ingredients

  • 1 yellow pepper, quartered and seeded
  • 1 or 2 red chillies, seeded
  • 1 mango, peeled, and the stone removed
  • 2 bananas, peeled
  • 1 teaspoon or so of fresh lime juice
  • 1 mild onion, peeled and grated
  • 2 or 3 sprigs of mint, leaves only
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • ½ teaspoon each ground coriander and cardamom

Method

Put all the ingredients in the food processor, and ‘pulse’ until you have the texture you prefer, chunky or smooth. Red and green versions can be made with appropriate fruit and vegetables.
