Wipe the fish with kitchen paper. Brush with olive oil, grate on a little zest and brush with orange juice. Mix the seasoning and flour and coat the fish in it lightly. Fry the fish in olive oil, then arrange on heated dinner plates. Garnish with herbs, vegetables or salad leaves, and serve with boiled, steamed or mashed potatoes.
Heat the remaining fresh olive oil, mix with orange juice to taste, season and pour it over the fish at the table.
