Lemon Cordial


  • 600 mls (1 pint) water
  • thinly peeled zest and juice of 6-8 lemons, about 400 mls (14 oz)
  • 50 g (2 oz) piece of fresh ginger, sliced
  • 500 g (1 lb) granulated sugar


Put all the ingredients in a saucepan over low heat. Let the sugar dissolve, then bring to the boil, remove from the heat and steep overnight. Strain, bottle, label and keep in the refrigerator. Dilute a tablespoon or so in a glass of chilled sparkling water for a most refreshing drink. A little poured over ginger or vanilla ice cream is very good too.
