  • 250 g (½ lb) melon, diced small
  • 1 mango, peeled and diced small
  • juice of 1 lime
  • juice of ½ orange
  • 3 or 4 spring onions or baby leeks, trimmed and finely sliced
  • 1 clove of garlic, peeled and crushed
  • 1 tablespoon light muscovado sugar
  • salt
  • pepper

Method

Mix all the ingredients together, cover, and allow to stand for at least 30 minutes to let the flavours develop.
