For a simpler dessert without pastry, try this very easy mango fool.
Peel the mango and pare off a couple of slivers for garnish. Roughly chop the fruit and blend or process until smooth, with rum if you like, and sugar if necessary. You might find a dash of freshly squeezed lime or lemon intensifies the mango flavour. Fold the whipped cream or custard into the mango purée and spoon into wine glasses. Chill until required, and serve topped with the slivers of mango and toasted flaked almonds.
