Turkey and Trahana Soup

Turkey stock can be replaced with chicken, duck or game stock to good effect.

Ingredients

  • 1 onion, peeled and finely chopped
  • 2 celery stalks, trimmed and finely sliced
  • 1 leek, trimmed, sliced and thoroughly rinsed<

Method

Fry the vegetables in a saucepan in the turkey fat until golden brown. Add the stock, and cook for 20 minutes. Then add the trahana and half the coriander.

Cook until the trahana is soft, and then stir in the remaining coriander and the feta cheese, and serve in heated soup plates, with warm pitta bread.
