Potato-topped pies are perfect food for informal entertaining as they are easy to eat, with a fork only. Shepherd’s pie, and all its relations, are a treat, and not difficult to achieve. You can assemble the shepherd’s pie in advance and put it in the oven just 30 to 40 minutes before you want to serve it.

Ingredients

  • 1 medium onion, peeled and finely chopped
  • 1 tablespoon olive oil
  • 750 g (<

Method

Lightly brown the onion in the olive oil. Mix with the rest of the ingredients, except for the potatoes, and spoon into an ovenproof dish. Spread the mashed potato over the top, and score with the tines of a fork.

Bake for about 45 minutes in the top of a preheated oven at 180°
