Peel, thinly slice the potatoes, and cut into thin strips. Heat half the fat in a large frying pan, and put in the potatoes. Sprinkle lightly with salt, and fry them until they have soaked up the fat. Add the remaining fat, and then gather the potatoes into a cake in the centre of the pan, squashing well down to bind it together.
