  • 150 mls (½ pint) whipping cream
  • 3 or 4 plums, quartered and poached with a little water and sugar to make a thick syrup
  • 2 individual meringue nests, broken into pieces


Whip the cream, and fold in the fruit, syrup and the meringue pieces. Spoon into wine glasses, or other serving dishes, and serve immediately. It is a good idea to have fruit and cream already chilled. An alternative method of serving this combination of ingredients is to fill unbroken meringue nests with the whipped cream and heap the poached fruit on top, or vice versa.
