Roasted Asparagus and New Potatoes

Ingredients

  • olive oil
  • 12-18 asparagus spears, trimmed
  • 1 kg (2 lbs)

Method

Pour some olive oil into a roasting tin, and in it roll the asparagus and potatoes.

Roast for an hour or so at 200°C/400°F/gas mark 6. Move the vegetables to a lower shelf if they show any signs of burning, although by the time they are served, they should be nicely browned in places. Season lightly before serving.
