The perfect guacamole

Avocados are plentiful and relatively inexpensive. Buy them hard and perfectly unblemished, with the vestigial stalk still attached, and the fruit will ripen in the fruit bowl in a few days.


    You Need

  • To feed 8 people, 4 large ripe avocados, salt, pepper and a fresh lime, six spring onions, trimmed and cleaned, fresh red or green chillies, depending on your tolerance, and a bunch of fresh coriander, rinsed and dried.


Peel and roughly chop the avocados, then mash with the salt and pepper, grated lime zest and a little lime juice. Finely chop the spring onions and seeded chillies and stir into the mashed avocado. Cover with clingfilm until required, but preferably serve immediately.


For a smooth guacamole, put all the ingredients in the food processor and switch the ‘pulse’ button on and off until you have the texture you prefer.
