Avocados are plentiful and relatively inexpensive. Buy them hard and perfectly unblemished, with the vestigial stalk still attached, and the fruit will ripen in the fruit bowl in a few days.
Peel and roughly chop the avocados, then mash with the salt and pepper, grated lime zest and a little lime juice. Finely chop the spring onions and seeded chillies and stir into the mashed avocado. Cover with clingfilm until required, but preferably serve immediately.
