Here is a very easy and good recipe for salsa. It can be made in the food processor.
Peel and roughly chop a firm mango and an avocado. Chop, but do not blitz, in the food processor with a peeled onion, a little fresh ginger and some fresh coriander. Stir in grated lime or lemon zest and juice, salt and pepper to taste, and a little light muscovado sugar.
