If you look up the word huarache online, the first thing you’ll see are photos of handmade sandals, which is how this antojito, with its sandal-like shape, got its name. Huaraches may first be filled with refried beans (see page 26) and then topped with almost anything you like. Or, for a quicker preparation, you can skip the filling as I have here. I like mine topped with a layer of refried beans, chorizo, queso panela, and salsa and finished with finely chopped cilantro and onion.<
