Tetelas are triangle-shaped filled masa “pockets.” They typically conceal beans and cheese, and here I have used black bean paste and queso Oaxaca, which is similar to string cheese (a type of mozzarella) in that it pulls apart into “strings” or strands—or rajas in Spanish.
