  • About

A cousin of the better-known enchilada (which was originally simply a corn tortilla fried and dipped in salsa but is more typically now served with a protein filling), the enmolada is dipped in mole instead of the usual salsa. Enmoladas are a great way to stretch your leftovers for the recalentado. If you use leftover mole from the Roasted Black Sesame Mole Rib Eyes recipe, it makes for a super-easy process.
