For this honey-glazed loaf bread, I like to use white Sonora flour from Frog Hollow Farms, based in nearby Brentwood, a place long known as an agricultural center. Frog Hollow first planted the heirloom white wheat, which was introduced to the American Southwest and Mexico by the Spanish in the early seventeenth century, in 2018 and began milling it in 2020. The flour imparts a mild, sweet flavor to this popular bread.
