Pambazos are a popular street food in Guadalajara, where you can’t walk more than a few blocks without finding a puesto (food stand) selling this “wet” sandwich. The word pambazo is derived from the term pan basso (literally, “low bread”), which was historically used for peasant bread made with the poorest-quality and oldest flour.
