Thumbelina carrots are mini carrots. They are often spherical, about the size of a golf ball, and their flavor is reminiscent of a mild beet with a slightly sweet finish and mild herbaceous undertones. The pineapple in the salsa highlights the carrots’ natural sweetness while the mild chiles provide a nice counterpoint. Here, the carrots are served as a side dish, but they can also be spooned into tortillas and topped with the pineapple and cilantro for a vegetarian taco.
