Who doesn’t love potato pancakes with applesauce? Here is a Mexican take on that iconic pairing. The cotija cheese adds a tangy flavor, the perfect foil for the spicy applesauce.

Ingredients

For the applesauce

  • 1 jalapeño or serrano chile, stem and seeds removed
  • ½ cup (120 ml)

Method

To make the spicy applesauce, dry roast the jalapeño or serrano on a comal. Make the Tomatillo Applesauce, adding the roasted chile to the blender along with the tomatillos and poached apples.

In a large pot, combine the potatoes and 1 teaspoon of the salt with water to cover generously. Place over high heat and bring to a boil, then reduce the heat to
