Growing up, it was unusual for me and my siblings to have dessert, especially on a weeknight. But on Sunday, the smell of sweet potatoes cooking meant we were in for a treat, as my mother stood in front of the stove preparing camote en leche (sweet potato in milk), one of my favorites. I like to use Stokes purple sweet potatoes for this dish, as they have both purple skin and deep purple flesh, which results in an eye-catching dessert.
