A classic French confection, macarons are the perfect balance of almond flour, whipped egg whites, and sugar, paired with a decadent filling. For this recipe, I took a classic Mexican pastry, conchas, and used them to make French macarons with a twist. I dry and grind some of the sweet bread rolls and use fresh crumbs as part of the filling for an overall delicious taste and texture. Look for freshly made conchas at your favorite Mexican bakery; day-old ones work well here.
