Huckleberry Mimosas

Huckleberries are slightly tart and taste a bit like blueberries but with a hint of wildness. Bouchaine 2019 Brut Rosé, with its wild strawberry, raspberry, and brioche flavors and fine long-lasting bubbles, makes for a spectacular mimosa. Make a double recipe of the huckleberry syrup and save it for your next pancake breakfast. If you cannot find fresh huckleberries, frozen berries can be substituted.
