Niño Pobre Tacos with Oysters and Mexican Rémoulade

Growing up with a single mom, our family lived in what is now called a food-insecure household. My mom’s version of the storied New Orleans po’boy was a beautiful handmade tortilla smeared with tasty refritos that had been made from scratch: the beans were cooked in a clay pot and then smashed and fried with savory onions and garlic. Topped off with fresh salsa, my siblings and I all knew we were in for a delicious treat—a treat we never associated with poverty. This recipe is my take on th
