According to the most commonly repeated account, the Caesar salad was invented in 1924 at Cardini’s restaurant in Tijuana, Mexico, by chef Caesar Cardini. For my version of this wildly popular salad, I add trout fillets from family-owned Mt. Lassen Trout & Steelhead, which farms its fish in pristine spring waters at the base of the mountain. You don’t have to use a molcajete to make your Caesar dressing, but it’s more fun than the blender method!
