Meatballs stuffed with hard-boiled eggs can be found in cuisines around the world, from Morocco’s kwari bilbeid in a spicy tomato sauce to India’s nargisi kofta in curry to England’s Scotch egg. In Mexico, meatballs are traditionally made with ground beef or pork or a combination and are almost never served without an egg in the center.
