In a large bowl, combine the cabbage and carrot and toss to mix. In a small bowl, stir together the mayonnaise, crème fraîche, vinegar, orange juice, and lime juice. Pour over the cabbage mixture and toss to coat evenly. Season with salt and toss again. Use immediately, or cover and refrigerate for no more than 1 day before serving.
