  • 1 cup (185 g) dried black beans or other dried beans of choice, such as pinto or cannellini

Method

Pick over the beans, discarding any grit or other debris, then transfer to a bowl, add water to cover, and soak overnight.

The next day, drain and rinse the beans, then add them to a clay pot (olla) or saucepan. Be sure the pot is large enough to accommodate the beans as they expand. The dried beans should not rise above the bottom one-third of the pot. Add water to cover the beans by t
