Pick over the hominy for any grit, then rinse well, transfer to a bowl, add water to cover, and soak for 6 to 8 hours.

Drain the hominy, discarding the water. Fill a large pot with water, add the hominy and onion, and bring to a boil over medium-high heat. Reduce the heat to medium and cook at a gentle simmer, stirring occasionally, for about 2 hours. The hominy is done when the grains
