Method

In a blender, combine the peas, lime juice, oil, vinegar, and honey and blend until puréed. Pour the mixture into a bowl, add the mint, cilantro, jalapeño chile, shallot, and garlic, stir to mix well, and season with salt. Use immediately or within a few hours of preparation. If the salsa seems too thick, add more lime juice or a bit of cold water to thin it.
