  • ¼ cup (60 ml) red wine vinegar
  • 2 tablespoons fresh orange juice

Method

In a bowl, whisk together vinegar, orange juice, mezcal, and sugar until the sugar dissolves. Slowly drizzle in the oil while whisking continuously to form an emulsion. Season with salt and pepper. Store in an airtight container in the refrigerator for up to 3 days.
