The cold and chilled soups of North Africa are ancient in origin and were originally introduced to Morocco by the Arabs. This particular milky white soup has travelled further with the Moors into Spain. Heavily laced with garlic, it is unusual but deliciously refreshing in hot weather, and makes a delightful, tangy first course for a summer lunch party.
