Sweet and crisp, deep-fried slices of plantain are not only a great street snack, but they also make excellent nibbles with drinks. Make sure the plantains are ripe - the skin should be brown and mottled - otherwise they tend to be woody rather than sweet and fruity. Be liberal with the spices as the starchy plantains are able to carry strong flavours.
