Cucumber and tomato salads are so simple yet hugely versatile. Add them to mezze spreads for their refreshing flavour and crunchy texture; offer as a palate cleanser during a feast of several courses; or tuck into pitta and flat bread wraps for a snack. The chicken in these pitta breads can be hot or cold - either roast a small bird specially or use up the leftovers from a large roast chicken.
